The best level of meat or beef is assigned as “prime.” This grade is determined by how tender, juicy and flavorful the U.S Department of Agriculture finds the meat. “Marbling,” which is pieces of fat, also plays a role in quality level as it contributes to the flavor. While prime meat is usually found at expensive restaurants and hotels, there is actually an extremely small percentage of beef in the country which is labeled as prime. The two grades below prime are select and choice. These are the ones most commonly found at a typical supermarket.
